Hjónabandssæla – One of the most common and tradition cake that every housewives can make – kind of a blueberry pie, but a healthier version, because it’s a blend of flour and oatmeal. Of course everyone has different recipes, the one I’m recommending here is one of the easiest to remember and yet DELICIOUS. My husband said it’s one of the best he had ever tasted ! If you are vegan, you can substitute butter to coconut oil.
It’s irresistible when it’s right out of the warm, still warm in the heart. And savour with Icelandic whipped cream.
- 2 cups oatmeal – 170g
- 2 cups flour – 170g
- 1 cup sugar – 100g
- 1 cup melt butter – 200g
- 1 tsp. baking soda
Jam at your choice, traditionally it’s rhubarb jam, but I prefer blueberry jam.
Preheat the oven to 200C. Mix all the dry material together, put 2/3 of the dough into a baking tray in one layer, cover with jams, the the rest of the dough. Bake for 35 – 40 minutes.
