Charlotte who?

After my first éclair this is my first charlotte!! Before i thought macaron is the most difficult dessert who knows charlotte is not easy as it seems to be!!! The key is to choose the good quality black chocolate plus once the pears been caramalized, it could be very liquide which makes the charlotte very diffiult to be formed! So the best is to do one-night before, leave it in the fridge at least for 5 hours!
